From what I do day to day, it doesn't really seem worth it. Really interesting just for the sake of what the processor can do, though.

Yeah it all depends on the use case. You should be able to do it with a razor blade instead of the custom block, just gotta take it slow, cut into under the heatspread, and be steady. Did it with my i7-7700k without issue, with great results.

The temp drops seem worth it if you are doing a lot of heavy workloads or gaming though, almost 10*C with an overclock.
