If the can isn't bulging, it's probably good. SPAM lasts a lot longer than the chart indicates. Some sources I've read show upwards of 20 years.
I’ve been canning butter. My freezer storage is minuscule so I had to explore other options. The shelf life is 5 years. I’ve had some on the shelf for 2 with zero issues. We actually prefer the canned butter. It’s texture is great and the flavor is enhanced.
Who knew canned ground beef would have a longer shelf life than Spam?

Fry it first. It makes all the difference. You can season it while frying. I season for spaghetti sauce, tacos, bbq, etc. When I first started canning I thought cooking it first was stupid, twice the work. But the difference in the end result makes the extra work worth it.
yeah i brown it, drain... its the high heat from canning it just turns it like taco bell meat... i really dont like it.

Even a cursory look at old "C-Rations" makes me wonder about some of these.

You can can with preservatives. Example, salt or sugar.
You can can with heat.
You can use some combination.
