The trick for the aqueduct is to have it filled with water a bit at the time you build it and let it slightly trickle up from the top
you can build it "levelled" properly and it is really easy (no need for fancy tools)

Well excuse me for needing to design multiple 500+ acre drainage systems a month, plus spec example materials, while interfacing with clients and completing a half-dozen other engineering reports. When AutoCAD crashes and you lose 3 hours of work (after suffering through the buggy mess of using it) I WILL let the whole office know it by vocalizing a loud and angry "FUCK!!"
The Roman engineers likely only had one project at a time and could concentrate on it AND they had the help of a dedicated team.
