I finally did it.. I made Birria queso tacos tonight.. fucking killed it, too. Not shown was the wee bowls of consume and fresh salsa verde i had made to with them. Too many for us to have in one go; no idea if they'll keep well for later, but we shall see.

Consume: this was roasted Fresno chilies, Georgia Flame chilies, and Durango chilies (all homegrown), tomatoes, onions, garlic, ginger, and cinnamon

Birria: stew beef (sirloin); Chuck steak (for fat); and neck bones (boiled and de-scummed) - with added strained consume;

Cheese: Quesadilla cheese and Oaxaca

tortilla: yellow corn

Sauces: consume and salsa verde: salsa verde: tomatillos, serrano chilies, garlic, onion, cilantro

I did enlist a bit of help in my carbon steel pan with avocado oil.

That looks SOOOOOOO good!!!!! Man, now I gotta go surf a bunch of recipes. Never heard of it before. Had to look up birria (you look a mess). Probably making this tomorrow. Well done, and thanks for posting!!!

Now those right there look awesome. I love the browned corn tortillas. Did you do the enchilada sause dredge? Nice job.

I made my own consume sauce, but it was smoking too bad one it hit the oil so i just saved it for dipping e (there surprisingly wasn't as much fat as I intended to get). thankfully, the meat inside was smothered with it as well.
