Nice work! I’ve made a few very small batches over the years but it has always been on the fly, no real recipe. I tend to go pretty straightforward with habanero or Carolina reapers, a little salt, and some white vinegar. Most have turned out great though. Yeah the ingredients sound like jam recipes. But surprisingly these were both fairly common/popular flavor combos when I hunted for hot sauce recipes a month ago. Usually put sauces in bottles, but I was fresh out - canning jars and a water bath thereby being de rigueur.
Will order more bottles before I sauce the rest of my ferments.
