I have a couple jalapeño plants. Can I leave the peppers to turn red while growing, or should I pick them all while green?

What difference does this make? I only ever see green, must be a reason...

Reds are fully ripened fruit. Grocers and vendors typically sell greens, for reasons id assume that they're still good to eat and time-to-market - if it's on the plant, it's not being sold. Thankfully, these fruits are not like apples when eaten 'unripened' hahaha

They can ripen on the bush. Criminy! My father grew bushels of peppers. He and his best friend would stand in his gigantic garden and eat jalapenos off the bush, eyes watering and snot running down their faces. Absolute bliss.

Thanks for giving me a good memory. Man those were good times.
