Not sure if I am interpreting your question correctly, but the stack of signatures combined is called the text block. The text block is sewn with cords and binding tapes along with the head and foot bands to form the spine.

Signatures are group of pages by 4 and I guess the term comes from early book biding when the book binder would initial each group of pages as they stiched them together.
