Make stir fries and quesadillas, salads or El Pollo tacos. I like frying it after soaking chicken pieces in egg yolk, adding bread crumbs, seasoning and frying them while I have mashed potatoes, green beans and various vegetables cooked. My wife does it better than me, but when she teaches me I learn a lot.
I don’t eat a lot of chicken. And when I do more and more often it’s expired laying hens, which are not good like tender young birds. But yeah bone in is the way to go. I did a chicken tagine-like thing in the Dutch oven with castelvetrano olives and preserved lemons. That was my favorite chicken recipe lately and it was old birds.
I think chicken breast might be my least favorite kind of meat.
As an avowed and exclusive carnivore, pork, fish and fowl make for lovely appetizers or side salads to compliment the undulate red meaty main course. A properly salted and roasted 1/2 bird whets the appetite and preps the way for greater things to come.
Not a fan. I'll eat it if that's what gets cooked, but I'll never ask for it.
For high protein, low calorie chicken is hard to beat.
I do not concern myself with calories. It's junk science based on an outdated theory. I eat beef, eggs (mostly raw), occasionally pork, and rarely chicken. All from the farm never from the store. Two raw eggs in the morning, maybe (rarely) lunch, and a home cooked dinner at night. Cooked eggs and bacon on the weekends. My favorite snack of all time is probably sauerkraut (cold). Cayenne pepper on everything. That's my diet. Oh and fresh fruits and veggies in the summer. I can't help but snack in the garden.
Are you making your own sauerkraut? Incredibly easy to do. I add a fuck ton of raw ginger to mine. Yum! Just finished making 3 jars yesterday after an 8 day sit. So good for gut health, with gut health being essential to overall health. Sounds like none of this is new to you.

Chicken breast or thighs wrapped in bacon, pop them in oven or air fryer.
Pulled chicken in slow cooker - dump a lot of breasts in with sauce of choice, usually some tomato pasta sauce. You can throw in additional sundried tomatoes and/or olives for extra flavor.

I poach it, and eat it without seasoning of any kind, including salt or pepper.
I dump vegetables into the pot after poaching, for 60-90 seconds.
I eat this as is, or with a couple of slices of bread.
I drink water before and after eating, but not usually during.
1-2 hours after eating, I feel like a superhero.
Then I exercise for 30-60 minutes, then read and study.
This is literally my evening routine, and I sleep like an infant.
Herbs de Province (idk about the spelling, autocorrect suggested it.) It's an herb blend. Awesome on birds. (Haven't tried it on duck.) Anything you make with beef, can be attempted with chicken. Most dishes will turn out well. Chicken can be cooked and shredded with mixer, makes short work of it. Helps it along to replace ground beef in a dish. White chilli. Look up a couple of recipes and go from there.
I like white chili but I don't think I've ever made it myself. I'll have to give that a go. Good idea.
