I've only got black bears to deal with very rarely so it's usually not an issue, I generally stay near the pot while cooking and it helps that I'll bring a few beers and some ammo with to kill some time.

Smoking eskimo style takes a long time though, i couldnt guard it the whole time. But i am always armed even at home. Several uncomfortably close lion and bear encounters right in my back yard. Get wolves and moose roaming through occasionally too. Just not a good idea to fuck around outside without a gun. Bluffed off a number of asshole critters, only ever had to kill one bear and one lion for being dickheads. But ive killed several for recreational / food acquisition purposes.
