Sounds like you have to move as soon as possible before she lets everyone see what is there to steal while you're at work. Some people do not understand the obvious.
Might be indicative of a larger problem in your relationship.
It can be exceedingly challenging to alter someones core philosophy and outlook on life.
If she's that stupid, you might want to consider the overall relationship because you will likely end up finding yourself wishing she wasn't so naive.
Have you approached the topic with her? appeal to emotion perhaps?

i get the concern. have you asked her why she keeps them open, and then after explain why you prefer them shut? maybe if she understood the concern is security, she would better honor the request.
If she wants to look outside, that could be a good opportunity to deepen the relationship by taking her out to a nice outdoors place for a picnic. wildlife preserve or riverfront or lake or something like that.
do you know why she likes to keep them open? could be maybe she wants to watch for problems. That could be an opportunity to install cameras at her preferred angle, she can watch on the phone and you get to keep the blinds closed. I'm sure there's a win/win in there somewhere
Taking her outside in a neighbourhood like that could be a great redpill experience for her.
