TL;DR: my parents smoked a brisket too hot for a bit too long so it came out smoky but over done. I asked for suggestions.

I went ahead and pressure cooked it with some negra Modelo (cinco de mayo sale) and bone broth for about an hour. Since it was one large chunk, I sliced it a bit, then cooked another half hour. Came out tender, juicy, totally edible. So I made a homemade enchilada sauce from dried chilis (guajillo, ancho, and a chipotle) and made them into a large pan of enchiladas rojas. Was actually really good!

sounds really good, especially as an enchilada dish with homemade sauce (your sauce is similar to how I make mine) - sounds killer actually.

just FYSA - Modela is Anheuser-Busch, just in case that matters.

Thanks! It was pretty damn good, hardly any leftovers and even the kids enjoyed it. And yes - I usually don't really like Modelo anyways, but wanted that dark-ish Mexican lager flavor. I only bought a single, but yeah, I felt gay buying it.
