I believe it is attributed to Doc in an early 20th century autobiography, but still written a few decades after he did so who knows if he said it or just legend.
And you are both correct. While huckleberry can mean fool or dunce it the full phrase is self depriciating. As in if someone has a job to do "Ok I guess I'm dumb enough to do that."
