It appears to be similar in intention to the saying, "I'm your boy." Mildly self-deprecating, indicating a willingness to be led along without objection. "I'm your man" has a similar connotation, in that to be someone's "man" was to be their servant or employee.

I believe it is attributed to Doc in an early 20th century autobiography, but still written a few decades after he did so who knows if he said it or just legend.

And you are both correct. While huckleberry can mean fool or dunce it the full phrase is self depriciating. As in if someone has a job to do "Ok I guess I'm dumb enough to do that."
