What, I should stand there like a lunkhead for 5-10 minutes, THEN put the food in? I throw it in right away, set a timer on my phone (unless I forget), and hope for the best.

EDIT: my cherry pie turned out OK, just a little overdone on one edge. And kinda raw in the middle. Hmm.

I haven't seen or heard from her in over 5 years, so I opted to do it myself. I do miss her cooking...besides, it's a frozen pie, even I can 'make' it.

Recipes can provide a good recommendation as to the duration and temperature to cook a specific dish. Temperature and duration are simple variables. Makes cooking a given dish from kitchen to kitchen very predictable.

But, ovens heat at different rates. Hence, the pre-heat removes that ramp rate variable..

I also bake at 5-10 degrees less than recommended. My oven is kinda gay.

No, I always use 5% less heat and time, this works esp. well with pizza.

They didn't need to preheat, because they were running 24/7 (in my dreams).
