I'm guessing the carb content is closer to 0.8g, but through some rounding shenanigans they can get us to consume something that is 80% carbs.

Sure, so does any pre-packaged, single-ingredient item in the meat, dairy, or produce section. These 50+-ingredient monstrosities are to be avoiding, as well as seed oils.
