yeah that doesn't sound good at all. that kind of food need to be prepared instantly from start.
one thing you try tho thats kinda similar (but better) is a mongolian grill, you pretty much pick everything you want and they cook it for you on the spot

I have been too those kinds of places and haven't really ever had a bad experience its been a while because a lot of them went out of business around here.
