Processed meats such as sausage, bologna and the ubiquitous "meat sticks" that are branded as healthier alternatives will use celery powder as a substitute and may even be labeled as "uncured."

TL; dr: processed meat is still unhealthy.

Is celery powder still bad for you though? I didn't think all nitrates were necessarily bad.

I'm still looking into it but, but apparently nitrates when bonded to proteins form nitrosamine, which is supposedly carcinogenic.
