I read an interesting theory on the mutilations. When an animal dies, it bloats due to gasses being created and trapped in its body. If it bloats large enough it will split along a section of skin in a straight line. These lines have been described as laser like. The location of the split will vary based on a number of reasons exclusive to that particular animal's physiology.

As to missing eyes, tongue, etc., it makes sense that maggots, birds and other small scavengers will eat them first being easy to access and soft tissues.
