I imagine it's wholesale. The church that runs it does so at a deficit. Gator was very spicy.

And my local grocery store they have elk, venison, bison, yak, and kangaroo. It's the only grocery store in the country that I found that much variety in the ground meat.
I prefer mixing the elk with the bison. I make big burger patties with that meat.
I can get elk, venison and bison no problem. Yak is novel to me. And roo... Last I heard of that shit domestically was when Jack in the Box was inadvertently serving it up in their taco meat in the 70s. Lots of jokes the about ordering a Hopper.
Read that a roo will generate more pounds of protein per unit weight of fodder than any sizeable critter...
It's very expensive but it might be fun to buy once a month.
