I'm guessing the spinning caused the liquid to cover much more of the sphere's interior, and the intense spinning dispersed the cold much more effectively than it staying static. Those two factors caused a runaway reaction of sorts- the vaporization caused faster spinning and more efficient coating the interior, which in turn caused faster vaporization, in a closed loop.
Wonder if they could use this principle for automobiles.
