I'm not sure about the mRNA mutating, even if that happened it would produce another non-self protein. Which would trigger a continual auto immune disease, where our body keeps attacking itself to get rid of the corona spike that's being produced by our heart, or liver, or lungs, or brain, or whatever. If the mRNA is somehow protected by the cells and doesn't end up degrading very quickly, this seems to be a real possibility.
