Many of the tank commanders will be from NATO, private on holidays of course. But even if they are experienced with the machines, they haven't trained long enough to act as a team with the Ukrainians. And a tank without air support is a lost cause anyway.
No they won't. Unless Ukraine puts all the fakers and non-combat mercenaries that lied their way into the Foreign Volunteer Brigade into the tanks, it will be unexperienced Ukrainian tankers that have like 30 days of experience doing some familirization fire on them at Grafenwoehr or Hohenfels. The Ukrainians don't practice logistics on any functional level, so they'll lose tanks by running out of fuel as easily as they break down because the Ukrainians don't have the domain or institutional knowledge to repair and maintain advanced armor like that.
Poland sends thousands of their soldiers into the Ukraine (on holidays, of course). Cemeteries near Polish garrisons are full of them. The Polish military does it to make sure that their army is not completely unexperienced in the coming war. They will send their tank crews too.
Where are your sources on this? I call bullshit. Poland may be sending mercenaries into Ukraine, but they're not sending their actual uniformed military.
