One has to wonder if Jesus says two or three and you're with me is that he wants us to not travel the world alone to always have companionship, someone to trust and someone to love. And in that trust and love, you'll find him.
Well, I'm pretty sure verse 19 is calling back to verse 16 relating to judicial procedure. It was a protocol in how to deal with problems.
I understand what your saying, though. For our spiritual health we need to be around and in fellowship with other Believers. We're also to always "pray without ceasing". Our relationship with Him is constant, or should be. I had always wanted to save a piece of my life for myself. I'd pray and read the Bible but I still had this small little part of me I didn't want to give up to Him. It wasn't until I DID give it up and start living it continuously that He started making changes in my life. It was...surprising because I could actually see, feel and understand that something had changed, within me. I know since I'm saved God is always with me. I'm never alone, in spirit.
So if God does live within you, you're never alone. But the point of the verse isn't to say or show that, it's to provide a procedure for verse 16 and you can probably extrapolate that it demonstrates that it only takes a gathering of 2 people, joined in His name, to worship and have church.
