Here is how to stop your iPhone apps from updating automatically–
Open the Settings menu.
Scroll down and select the iTunes & App Store option.
Turn off the Updates option in the Automatic Downloads section.

Unfortunately they can still force an automatic update. It's happened to me at least 3 times in the last 6 months. I go to check the automatic update options and they're still off.
