The other week the toddlers asked for pickle sandwiches out of nowhere, so I came up with this:

Diced pickles onions and tomatoes mixed with mayo and mustard. Spread on toasted bread Add thick slices of cheddar and some more pickle slices. Close bread to create a sandwich.

To be honest it was pretty good, but it felt like it was missing something.

Hot sauce maybe, but the kids wouldn't want that.

Perhaps a cylindrical or disk shaped piece of animal.

Chop up a few hard boiled eggs and mix it in. What you have is already kind of similar to a "salad" my wife makes.

Didn't think of that! Might be a fun way to get baby girl to finally eat eggs.

The mayo/mustard will sort of cover up the "eggyness" if that's what bugs her.

Add some anchovies and tuna in olive oil, black olives.
