The shocking incident unfolded at Bankstown Central in the city's south-west just after 2.30pm on Saturday afternoon.
Disturbing footage obtained of the incident shows three men engaged in a heated confrontation before chaos erupted.
Moments later, one man could be seen collapsing to the ground as horrified shoppers scrambled to get out of the way.
In the video, a brave bystander armed with nothing more than a chair attempts to intervene, desperately trying to separate the men as screams echo through the shopping centre.
In later footage the injured man chases down the alleged attacker before collapsing to the ground, clutching his side.
