It looks like I could get it through my great-grandfather I just have to track down his information. I'm trying to figure out if I can make a international phone call with WhatsApp because I can't call the Irish embassy to ask them. But it gets even trickier because he was actually Northern Irish but I read somewhere that it doesn't matter that Irish is Irish so that's another thing I have to confirm. I do have a Republic of Ireland great grandparent but no one knows much about him so that might be a lost cause. I also have a great grandmother too but anyone that knew anything about her is dead or I have no contact with. Fun fun.

I looked it up for you and this seems to be official government info:

Citizenship through descent from Irish grandparent If one of your grandparents was born in Ireland, but neither of your parents was born in Ireland, you may become an Irish citizen. You will need to have your birth registered in the Foreign Births Register.

Looks like it can also go one step further for great grand parents. I'm going to try and call in the next few days to the Irish foreign office and see what they say.

If the following is still accurate, then yes in a roundabout way.

Apparently some countries in the EU are easier than others to get a citizenship in. Italy is the one I last knew about. Once you have that, you can move anywhere in the EU and become a citizen there.

This is from a story I read almost 20 years ago from a guy who did this. Then used a tax loop hole to move his assets to Ireland, then some other country where he could redeem it all tax free.
