Thought I'd take a pic of what I canned this week before it gets stored down in the cellar, which is 10×20 and already full. I canned all summer long. I still have to process 30-40 lbs of tomatoes, 20lbs of sweet peppers, 15 lbs of onions. It never ends...

You may like the reusable lids and rings. We switched to tattler brand when the regular ones got scarce and pricey. They work well, and are reusable for decades. Now we don’t stress over canning whatever random thing because of cost of lids.

My wife saw me looking at this post and I could tell she was jealous of you. She scrunched up her lips and looked angry.

The jew fears the stocked shelves.

I've tried my hand at canning. Kinda did a crash course. Turned out decent for most of the stuff. I'm probably at a level 2 of 10 haha. Definitely want to get more into it.

Nice work.

I still have to process 30-40 lbs of tomatoes

Yeah, I started canning because of all of the tomatoes from my wife’s garden. I think I made three gallons of salsa that first year with all of the leftover tomatoes. That was back in 2013 or 2014, and I think I still have a few cans from that year. Stuff never goes bad, really.

I have made tomato relish, chow chow, green and red salsa, spaghetti sauce, paste, and regular canned tomatoes.

Cayenne and Carolina reaper hot sauce in the making.

I hope you went light on the reapers. Those things are deadly.

After this season I have a 12 ounce container full of reaper powder and another with dehydrated whole reapers with an O2 absorber. I have about as much chocolate bhut, yellow naga, and habernaro. Also BIG containers full of serrano and poblano powder.

I'm going to have to eat chili 3 days a week for a year to go through it.

I won't eat the reapers. My family does. I sell and trade them. What doesn't get used I spray on my flowers so the deer stay away.

I really thought it was a giant bottle of dehydrated flies.

Not that I am accusing you of being a reptilian lizard person. More that you seem like the type of person who would have a reptilian tied-up in the basement that you needed to keep alive for "insurance" purposes when shtf...

Cool, those garlic dill pickles then? I would like to find a winner recipe for those for next season.

I do have some. Most of that green stuff is relish, okra, green beans, chow chow, and peppers.

Wow! Super nice haul.
