As long as you are not fat I don't care what or who you eat.

Remind me again what's the keto diet

You cut out sugars and bread I believe. answer the man!

Yeah in general an average person consuming under 40g of sugars/carbs per day will naturally fall into ketosis, whereby the liver converts fat (whether in the stomach or in your body) to ketones which can be burned for energy.

Big fan of keto here as well. But due to recent research I'm no longer of the opinion that it guarantees a healthy heart, which is what OP's alluding to. I'm not changing my diet but I am making a point of having a complete physical every year with a focus on the circulatory system. Fewer surprises is better, always.

it would be awesome if I could have a permanently-installed blood analyzer, but alas

So when your cholesterol gets higher, you'll see medicine ads while browsing, and if your sugar level is ok, your youtube videos will start with "have a beetus-cola right now. (you can)".

ah, you're right, we can't have nice things... they'll always get jewed up

What kind of mental health benefits?

better, deeper sleep... don't get after-meal "crash", I can be "on my game" (100%) longer... obviously hard to quantify any of this, but it's not a placebo effect for sure

Since doing the vegan debate I've been looking into to diet quite a bit lately I'm considering something like this.

It does require dedication... A single donut or slice of pizza can throw you off-balance for days, since after a while your body changes the enzymes in your digestive tract to accommodate fats
