Some do. She just put it in the dark and made sure that it had water sealing the lid.

They put it underground near certain trees which produce a kind of yeast and that helps the fermentation process. You can just use the yeast.

Or something like that. I'm not a kimchi maker.

You know more than I do already. That they bury it and use cabbage is about the extent of my knowledge of kimchi.

I don't think too many people bury it these days. It's made on the industrial scale and that's just fermented with giant vats. There's a How It's Made segment on kimchi, so I know they make it industrially and that those folks don't bury it.
