You've experienced most gameplay throughout the decades, and possibly older games made a better example of what modern games copy so it's all unimpressive and never feels fresh. You can watch youtube videos of most games and see what you're not missing, save money too. The only gaming experience that doesn't feel stale is multiplayer games, human opponents/co-op.
