Heart can be cooked slow and low to be softer to the tooth. It's a dense firm muscle. If you sear it on high for a couple minutes like steak bits you will get excellent flavor but Chenier than a fatty steak. Both are good depending on the desired dish

don't have a slow cooker so it's high and fast for me

releasing the lid steam every minute or so to stir

You can cook it slow in a pan goober. Low heat little bit of butter simmer with a lid
