For the fitted sheet, I fold the edges into the middle keeping each the same width, then just fold the sheet the long way, then again the opposite direction. It will end up in a square to put on a shelf. For the flat sheet I fold length wise seams inside, then top to bottom. The sheet will be easier to put on the bed by just doing the opposite.
