This question 100% depends on the jurisdiction. 'Self defense' isn't _exactly_ the right question here.
For example: In the great state of Texas, this would be a legal shoot.
Back in the day, Texas enacted tough laws against horse thieves. Because, if you still a man's horse, you still his ability to work and his ability to feed himself. So stealing a man's horse, in the eyes of the law, was the same as killing him. So - you are justified in killing a horse thief, even if he is riding away.
... and the same laws now apply to vehicles. So ... you jack my vehicle - I'm allowed to protect both myself and my transportation, with deadly force if required.
