Because race changes over time, you can be multi racial, and there are a few hundred thousand genes that define race, whereas we've had the same two sexes for millions of years, you only don't fit into one of those categories if something went very wrong genetically, and there's an entire chromosome worth of difference between males and females. if that doesn't make it obvious why you can change your sex but not your race, you don't understand jews and mirrors.
