When I'm keeping things in check my normal evening is 4 or 6 beers. When I'm not, I don't count. I know I need to reset it I bring home a new bottle.
My personal rule is one bottle at a time; single malt or rye, & it better last at least a month. Sometimes I find it too easy to break that rule which is why I have it & try to stick with it.

As your original question suggests, everyone has their own rules. Whether they state them aloud, write them down or even live by them is a whole different matter.
