Made banana bread today, its always a hit around the house when I have leftover bananas. Recipe is below and I'm adding mods to the recipe.

  • 3 very ripe bananas, (medium/large)
  • ½ cup unsalted butter, (8 Tbsp) at room temperature - I just melted the butter, its easier
  • 3/4 cup granulated sugar - (I made it with 1/2 cup of sugar and next time would probably go down a bit more)
  • 2 large eggs, lightly beaten
  • 1 ½ cups all-purpose flour (I added 1 & 1/4 cup of flour due to cooking at altitude, the bread came out nice and moist, I used Caputo)
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp vanilla extract

Bake at 350F for 50-60 mins, I baked it for about 55 mins and I used a cast iron pan. I typically don't add walnuts, we don't normally eat them and I don't have them around.

I made some yesterday, but I used brown sugar and subbed a quarter cup of the flour for cocoa.

Cool, I'll definitely try the brown sugar next. Also, I'm assuming cocoa would make it like a chocolate banana bread - that's an interesting spin

Yes, chocolate banana bread. The wife loves it. It's good, but then so is regular banana bread.

One day I'll give it a try, 101 is probably going to look at me like I'm crazy if I do it lol
