Made banana bread today, its always a hit around the house when I have leftover bananas. Recipe is below and I'm adding mods to the recipe.
- 3 very ripe bananas, (medium/large)
- ½ cup unsalted butter, (8 Tbsp) at room temperature - I just melted the butter, its easier
- 3/4 cup granulated sugar - (I made it with 1/2 cup of sugar and next time would probably go down a bit more)
- 2 large eggs, lightly beaten
- 1 ½ cups all-purpose flour (I added 1 & 1/4 cup of flour due to cooking at altitude, the bread came out nice and moist, I used Caputo)
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp vanilla extract
Bake at 350F for 50-60 mins, I baked it for about 55 mins and I used a cast iron pan. I typically don't add walnuts, we don't normally eat them and I don't have them around.
