I thaw our meat in the vacuum sealed bags they were frozen in, in a bowl of hot tap water. When they are thawed, I sear them and cook them to 140-ish degrees.
The meat spent more time in "the danger zone" at the butcher and in the back seat of my car on the way home, than it spends thawing before being cooked.
Am I really expected to believe that thawing my steaks this way will release a swarm of previously dormant bacteria?
