I've got a cool meat restaurant nearby. Suddenly their french fries become burned, impossible to eat. I first tried to tell about this to the cook, but he was unable to fix them. Then I told about this to the manager. Since the manager was unable to understand the low quality of their french fries, I bought him fries from Mc Donald's in front and invited him to compare. Apparently it worked, because today their french fries are normal again. Do you think it was cook's fault, or potato supplier's fault? I can't believe a cook unable to cook fries properly may exist.

Change the frying oil more often

it could be they wanted to save some money and they thought "hey potatos are potatos" he might have realised he was wrong

Well, a real cook must know what potatoes to use for frying.

Could of been old oil. You end up with a lot of small pieces getting burned in the oil.

They aren't changing the oil. If they're golden and crispy then that's weird.

Lots of places with new hires and bad hires right now, going on at my work.

Maybe not fresh cut anymore and store bought. Already cooked cooking them again.

Manager is like "this guy is nuts, is he really bringing me fries?"

"Oh shit he's coming back again today? I don't get paid enough for this shit."

I have got sense of humour. This is why I can do thing other people can't. Anyway it worked.

Were they hand cut fries or were they simply dropping frozen ones?

I don't know.

I was asking because when you make hand cut fries you need to soak the starch from them. Usually places do this overnight. If that isn't done the fry will have a different taste and texture as well as become darker as you have to cook them longer.

More than likely though, as other have stated they are being lazy and or cheap and not changing their frying oil.

I wonder how Mc Donald's is a shithole, but their fries are always good.

On the rare occasion I eat french fries I have to specifically ask for them "well done" because most places like to make mushy, mealy fries with a 0.5mm crust. Gross.

Fry Oil.

Either their oil filtration system is broken, or they allowed their oil to get old, or both.

A few months ago my local spot was having difficulty finding reasonably priced oil, and allowed this to happen. Given that that some groceries in my area are starting to ration oil purchases, I imagine this could get worse.
