Ended up with 5 that were big enough to keep. Very nice mild fish. Flour, egg, breadcrumbs and a little lemon is all you need.

*I put some creole seasoning on them before I bread them.

Acadians? You do know the history. When the British seized control of Canada, they offered all French people to remain if they just pledged allegiance to Britain. The smart ones just lied ang got to stay, the proud ones returned to France and the not-so-bright ones moved to French Louisiana. There was little room for them in New Orleans so they moved out into the swamps where they remain to this day.

But being French, they sure can cook, including shit sensible people don't dare to eat. I could cook tree roots and leaves and make it into the best gumbo you've ever had. Hint: File Gumbo.
