I'm a roofer by trade, got to work with this one old dude that was a wizard with sheet metal, he taught me a lot.

Some people are so good with sheet metal. Me I know how to make it wrinkled and not make a clean fold.

Like anything, it takes practice. I do enjoy the challenge of wrapping a natural stone chimney in new copper.

Well that's just art doing that the right way. My sisters ex brother in law was a stone mason who did patios and other stuff to million dollar homes in the riches area where I used to live. The guy took like 5 minutes to place the right stone but his patios were so good he had a waiting list like a year long and he made huge money with his attention to detail as in I believe like $50/hr for placing rocks. I would kill to make money like that. He didn't kill himself working but instead used his brain to put himself above the pack. I guess it's the old saying work smarter not harder. I met a painter down in southern NH that did small jobs, He was making $40/painting the inside of kitchen drawers. He was so meticulous using a 1/2 inch brush even for large areas. He showed me his other drawers and cabinets he finished already and they were flawless and beautiful at the same time.

That is a great skill. I've seen so many wrapped in other stuff where there are gaps at the top edge from the person not making final cuts and just putting it up and slamming it with a ton of tar in the open area's. Shoddy work there, I have seen some great copper work like you talk about. Those are the guys that taking the time to do it right and not just to get it done fast as possible no matter what. Recutting/minor trimming is the secret like putting a space board between cabinets and a not so straight wall on a kitchen refurb. I think most of the guys nowadays are learning on the job or just using the shortcut they were taught without trying to figure out the new way that is the proper way. If you know how to do it right it takes the same amount of time to do a 10X better looking job.
