Paper gaskets work well when the acrylic coating is evenly applied and properly cured. Some small shops take shortcuts. You have seen the result of taking shortcuts in making paper gaskets. Although, the paper roll could have had defects that allowed for blow through from pressure on the side, more so than uneven pressure. If you can get fluropolymer coated stainless steel stamped gaskets, that's the way to go.
