I go for the European butters with higher butter fat %. I see them mostly labeled at 85% fat and Europe's butter goes up to 90% butter fat. American butter is 80% butter fat at highest.

Irish butter in particular is the good shit. You can totally taste the difference in baked goods that use premium, high fat butter as opposed to the American shit
