Let's say my dad died or something, and I "talk" to him at his grave, would that be a sin? I mean technically im trying to talk to the dead and stuff, so it could be construed as such. But on the other hand, not really.

Why? Seriously, why are you trying to communicate with the dead? He is in one of 2 places (or 3, I guess, depending on the interpretation of some fringe passages). We already know what those in hell would say to the living: REPENT and BELIEVE IN JESUS!

If he is with God, why bother him? Just talk to God.
