Not entirely accurate. The southwestern French tradition of eating the Ortolan Bunting by this method actually dates back to Gallic/Roman times a few thousand years before Christianity even existed.
You don't eat the bird while wearing a napkin over your head to hide from god, but to preserve the aroma of the meal as you eat it. How this became associated with Christians and the delusion that it's even possible to hide from god likely has more to do with French culinary artistic elitism, than anything else. You're not a true skilled master French chef, until you've prepared and consumed the Ortolan by this method.
