If you can butcher one ruminant you can do them all. Best to stick to sheep and deer though as they are manageable sizes.
I skinned a squirrel myself, and watched a rabbit get skinned. I was starving when I skinned the squirrel. It was delicious. I was just a student when I watched them murder that poor bunny. The idiot who volunteered to kill it missed the skull. Rabbits scream. It was awful.

He's probably assuming you have tools that the average layman would not. Like a motorized/retractable chain to pull it up/hang by.
Better shoot a moose next to a road if youre planning on having that kinda gear. Most just cut up moose and elk on the ground. Often gutless method
