I've got 2 5 gallon batches of mead going now. One started in June and one in October. The first one with Lahua blossom honey and the second with monkeypod blossom honey. I've got a nice priced hookup on Honey straight from Hawaii.

The ones in June I tossed a whole pineapple, about 5 lbs of bananas, and a couple vanilla beans into secondary. Tastes like fruit punch. Still needs to age about another year.

The other is just a standard mead. I plan to experiment with flavoring with a couple gallons of it. My wife loves butterscotch. Figured I'd attempt to make it using a gallon of it for her. It still needs to age a year and a few months first.

All good meads must age at least a year and a half.

Damn you seem to know your shit! I homebrew beer on occasion but you could make us a Poal post about your meadery.

I make wine and mead. I have a brewing area set up in my basement. I only make 100-150 gallons a year. Someday it would be nice to own a winery/meadery. I've been toying with the idea of taking over the brewing sub to share what I know. Everyone should know at least the basics of making alcohol. It's a skill that you can barter with if shtf. I could share some knowledge of distilling as well. But we'd be distilling vinegar, in case any of you feds get an itch up your asses.
