Hot Buttered Rum (pic8.co)
One of my favorites for the cold winter months. Make a great after dinner drink while you sit by the fire. There's a bit more to this drink as you will see, but the extra prep time is worth it.
First, you have to make the batter:
In a large mixing bowl, add 1 pound softened butter, 1 pound brown sugar, 1 pound white sugar, 1 tablespoon ground cinnamon and 1 teaspoon each ground clove and ground nutmeg. Stir to combine, then add 1 quart of lightly softened vanilla ice cream and stir again. Transfer to a container with a lid, seal and store in the freezer.
Now that you have the batter, on to the drink making.
Ingredients
2 ounces gold rum
1 tablespoon hot buttered rum batter
Boiling water, to top
Garnish: nutmeg, freshly grated
Garnish: cinnamon stick
Steps:
Add the rum and batter into a mug.
Fill with boiling water and stir.
Garnish with freshly grated nutmeg and a cinnamon stick.
I recommend using Appleton Estate - Rare Blend rum (pic8.co) but I'm sure any quality rum will do.
