Text on the last 2 images was just @picman (love you Picman no homo) being bad, basically I just wanted to point out that after that last step the jerky went from being very tough (as most jerky is) to being very light with an easy chew. The last pic is after I vacuum sealed the jerky and put it on my shelf in my basement with all of my families other goodies, it should be able to sit there for at least a year.

Not that it will have a chance to since we are going to eat it... it's that damn good.

Looks great. I can't believe how many people don't know what real beef jerky is. Most people think beef jerky is that emulsified, extruded, crap that is shinier than a freshly waxed car.

Agreed but there's a couple of family owned businesses close by that make the good stuff. I go to them if I need a fix.

Didn't have a problem with that at all, just make sure that the vent on the chimney is wide open. I've bought bags of dehydrated jerky for most of my life but have never enjoyed the true smoky goodness that jerky can be until today.

It took a fucking plague to motivate me to try this but I am damn glad that I did.

yeah its tough with my smoker being electric its just so tight.... i could if i want smoke and then finish in deydrayetor.. but the quainity i do at one time.... yeah

The damn slices are so thin and take up so much grill space that doing this on a small smoker just can't be worth the effort. I normally can put about 110 pounds of meat through my beast in a day but 14 pounds of thin sliced jerky was all that I could manage.

Expensive, time intensive and very, very worth the effort at the end of the day.

Tastes good too and in these kind of days having a shelf stable protein that you can eat on the run is not a bad idea.
